Why Should I Make Grilled Greek Halloumi Kebabs?

When you grill kebabs, it’s like creating a whole new type of meal. The flavor and taste of each bite are just so much more fun because each chew gives you a whole new ingredient.

Adding fresh lemon juice and lemon zest to the tender and juicy cheese creates a flavor profile that is light and refreshing. 

Ingredients for Greek Halloumi Skewers.

Ingredients And Substitutions

  • Halloumi – Cube it so that it’s thick enough and large enough to be on par with the size of the vegetables
  • Olive oil – Avocado oil would work great, too. Used to marinade the halloumi and veggies as well as keep the skewers from sticking to the grill.
  • Fresh lemon juice – Fresh lemon juice gives the best flavor, but lime juice is a good option as well. 
  • Lemon zest – Use a zester to get the best zest. 
  • Garlic cloves  – Garlic powder could be used if you don’t have minced garlic. 
  • Dried oregano – You can also use Italian seasoning. 
  • Fresh basil  -Dried basil can be used instead. 
  • Fresh thyme – Dried thyme can be used instead.
  • Bell peppers red, yellow, or orange – The more colors the better! 
  • Zucchini – Slice them the same thickness if at all possible. 
  • Red onion – A sweet white onion would be yummy as well. 

How to Make This Halloumi Kebab Recipe

  • Whisk together the marinade ingredients, olive oil, lemon juice, lemon zest, garlic, herbs, salt, and pepper in a large bowl. 
  • Add the halloumi and toss to coat. Cover and refrigerate for 1 to 2 hours.

  • Soak 8-10 wooden skewers in water for 10 minutes to prevent burning.
  • Thread the marinated halloumi and veggies on skewers.  Save the leftover marinade.
  • Heat BBQ to medium and grease the grill with olive oil to prevent sticking.
  • Grill the halloumi skewers for 8-10 minutes, basting the leftover marinade and rotating halfway through cooking.  Remove from the grill and serve hot alone or with tzatziki sauce.

What does halloumi cheese taste like?

This type of cheese has a really nice mild flavor. The cheese that would be the closest in taste would be feta cheese, but they still don’t taste all that similar. In terms of texture, mozzarella would be the closest I can think of.

Think feta and mozzarella combo. The saltiness of feta with the springy cheese texture of mozzarella.

Since the flavor is so mild, you can actually just cut a cube and eat it just like it is. This is why it’s a great pairing with the veggies as it doesn’t overtake the flavor. 

What kind of milk is Halloumi made from?

Great question! Halloumi is a dairy product that is actually made from sheep’s milk. While this is more unique than other cheese products, this does give this type of cheese a light and refreshing flavor that isn’t too strong.

Can these skewers be premade?

They can! Just be sure that you prep the skewers via the directions above, and keep the completed skewers in the fridge and chill until you are ready to grill and eat. 

For the best results, I wouldn’t make them more than a day in advance as I wouldn’t want to risk the cheese becoming watered down and soggy.

Storage and Freezing

There are options when it comes to storing the cooked kebabs. You can let them cool completely and then store them in a covered container in the fridge, or you can pull all the cooked ingredients off the skewers and put them in an airtight container in the fridge. 

I don’t recommend freezing these skewers because the zucchini might become mushy, and the cheese might lose it’s shape and unique texture. 

Serving Suggestions

Since the flavors of this recipe are Greek, you should think about serving them with other Greek foods! A delicious Greek side salad is one of the best options that is also light and refreshing. 

You can also choose to serve them with a bed of white rice, Greek pasta salad or roasted potatoes, or even a nice potato salad.

Don’t forget that even more fresh veggies are never a bad idea as well.

Ingredients
  

  • 14 oz Halloumi Cheese cut into 1/2" cubes
  • ¼ cup olive oil plus more for the grill
  • 3 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 3 cloves garlic; minced
  • 1 ½ tsp dried oregano
  • 2 tsp fresh basil; chopped
  • 1 tsp fresh thyme
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 large red, yellow or orange bell peppers; chopped to 1 1/2" pieces.
  • 2 large zucchini; sliced into 1/2" rounds
  • 1 large red onion; chopped into 1 1/2 inch pieces
  • 8-10 large skewers, metal or wooden

Instructions
 

  • Whisk together the olive oil, lemon juice, lemon zest, garlic, herbs salt and pepper in a large bowl.  Add the halloumi and toss to coat. Cover and refrigerate for 1 to 2 hours.
