These succulent Greek Halloumi Skewers combine the richness of grilled halloumi cheese with the vibrant Mediterranean flavors of fresh vegetables and aromatic herbs.
2largered, yellow or orange bell peppers; chopped to 1 1/2" pieces.
2largezucchini; sliced into 1/2" rounds
1largered onion; chopped into 1 1/2 inch pieces
8-10largeskewers, metal or wooden
Instructions
Whisk together the olive oil, lemon juice, lemon zest, garlic, herbs salt and pepper in a large bowl. Add the halloumi and toss to coat. Cover and refrigerate for 1 to 2 hours.
Soak 8-10 wooden skewers in water for 10 minutes to prevent burning.
Thread the marinated halloumi, peppers, onion and zucchini on skewers. Save the leftover marinade.
Heat BBQ to medium and grease the grill with olive oil to prevent sticking. Grill the halloumi skewers for 8-10 minutes basting the leftover marinade and rotating halfway through cooking. Remove from the grill and serve hot alone or with tzatziki sauce.
Notes
Storage and FreezingThere are options when it comes to storing the cooked kebabs. You can let them cool completely and then store them in a covered container in the fridge, or you can pull all the cooked ingredients off the skewers and put them in an airtight container in the fridge. I don’t recommend freezing these skewers because the zucchini might become mushy, and the cheese might lose some of its shape.
