I love to make smoothies for breakfast or for a quick snack. To keep me full I need a little more than juice and fruit to keep me going. Adding greek yogurt to my shakes for a boost of protein is the perfect way addition to any smoothie!
Every morning I work out before starting my day so having a shake with some protein in it is essential! Greek yogurt contains 10 g of protein per cup. This recipe calls for a 1/2 cup of greek yogurt and a cup of unsweetened coconut milk so combined each smoothie has about the same amount of protein as two eggs.
Some of my other favourite healthy breakfast recipes are:
- Warm Cherry Greek Yogurt Parfait
- Oatmeal Cookie Overnight Oats
- Gluten-Free Chocolate Chip Mug Cake
- Peanut Butter Protein Pancakes
- Pumpkin Pie Overnight Oats
- Warm Apple N’Oatmeal
Pineapple smoothie recipe
Making a pineapple smoothie is a snap. I highly recommend using a good blender though like a Blendtec or Vitamix. Pineapple is very fibrous so a powerful blender is a must in order to breakdown the pineapple to a smooth pulp.
You can use fresh or frozen fruit for this recipe but I prefer frozen fruit simple because I like my smoothies icy cold. To make this smoothie you will need the following ingredients:
- 1 cup of unsweetened coconut milk
- 1 cup frozen pineapple chunks
- 1/2 a banana (fresh or frozen)
- 1/3 cup orange juice
- 1/2 cup Greek yogurt
- 1 cup of ice
You can use frozen bananas in this recipe but be sure to freeze them properly so that your smoothie doesn’t turn brown. When bananas get cold the peel turns an ugly icky brown colour and transfers on to the bananas inside the peel. The bananas themselves don’t taste any different and they aren’t rotten they just look gross.
How to keep frozen Bananas from turning brown
Peel them! It is the peel that turns brown when bananas are frozen. So before freezing ripe bananas simply peel them and freeze the peeled bananas whole. This way they stay a nice pale yellow colour and will keep your pineapple smoothie looking bright and sunny!
Can you use non-dairy Yogurt in this recipe?
You sure can! This recipe can easily be modified to use any non-dairy yogurt you prefer. Coconut yogurt would be a fantastic choice!
