Strawberry rhubarb pie is my absolute favourite pie so when rhubarb season hits I grab up all the rhubarb I can while it is in season. Now while I would love to make up pies night and day pie doesn’t exactly fit in my goals for a bikini body by summer. So instead I reduced the sugar, took out the pastry and added some to replace the ice cream with Greek yogurt for more filling option.
I get to eat the best part of the pie (the strawberry rhubarb combo) without the actual pie every morning!
Just prep the jars all at once and store them in the fridge for a quick morning breakfast or mid-day snack.
ingredients you will need:
- 1 lb strawberries
- 1/2 lb rhubarb (1/2 a stalk)
- 1/4 cup honey
- 1/4 cup red grapefruit juice
- 1 cup rolled oats
- 2 cups Greek yogurt
I prefer to use fresh strawberries and rhubarb but frozen will work just as well. You can also use orange juice if you don’t have grapefruit juice. I like the grapefruit juice because it is a little less sweet and adds a bolder citrus flavour.

Strawberry Rhubarb Overnight Oats
Equipment
- Non-stick pan
- Knife
- Wooden Spoon
- Measuring Spoons
- Measuring Cups
- 4 small jars or resealable containers
Ingredients
- 1 lb strawberries stems removed, sliced or quartered
- ½ lb rhubarb 1 stalk' trimmed; cut into 1/2 inch pieces
- ¼ cup honey liquid or creamed
- ¼ cup red grapefruit juice
- 1 cup rolled oats
- 2 cups Greek yogurt
Instructions
- Wash and cut strawberries and rhubarb. In a large non-stick pan over medium heat add the strawberries, rhubarb and honey. Mix until honey is melted and fruit is coated.
- Add in the grapefruit juice and oats and let simmer until the liquid is absorbed. About 2 minutes.
- Let the fruit mixture cool. Add a quarter of the fruit mixture to the bottom of each container. Top with a 1/2 cup of Greek yogurt. Seal and store in the fridge overnight and eat within 4 days.
