Strawberry Overnight Oats made with fresh spring rhubarb is like strawberry rhubarb pie for breakfast minus the pastry. Sweetened with only a touch of honey and topped with Greek yogurt you will fall in love with this springtime breakfast treat!
½lb rhubarb1 stalk' trimmed; cut into 1/2 inch pieces
¼cuphoneyliquid or creamed
¼cup red grapefruit juice
1cuprolled oats
2cupsGreek yogurt
Instructions
Wash and cut strawberries and rhubarb. In a large non-stick pan over medium heat add the strawberries, rhubarb and honey. Mix until honey is melted and fruit is coated.
Add in the grapefruit juice and oats and let simmer until the liquid is absorbed. About 2 minutes.
Let the fruit mixture cool. Add a quarter of the fruit mixture to the bottom of each container. Top with a 1/2 cup of Greek yogurt. Seal and store in the fridge overnight and eat within 4 days.
