These Crostini Crackers are the first things to go whenever I put out cheese spreads or dips for appetizers when friends come over. A few minutes in the oven, and you’ve got a crunchy, garlicky base for almost anything.

I stopped buying boxed crackers years ago. Homemade crostini crackers take barely any effort and taste much better than anything from the grocery store. Once you know how to make crostini crackers yourself, buying them just doesn’t make sense.
This is what I have been serving with them lately when we have people over: A bowl of Smoky Eggplant Spread and my White Bean Harissa Dip. Seems like I have a bit of a Middle Eastern theme going on. Both make for an easy appetizer with minimal work, and honestly, the crackers are tasty enough that people eat them plain too, so I always am sure to make extra.

Step-By-Step made Simple
If it’s just a few friends and me, half a baguette is enough to make about 25-30 slices. But if I am making enough for a large party, I just double or triple the recipe as needed.



The crostini are done when they are golden brown and crispy. It only takes about 12-15 minutes, so keep an eye on them because every oven is different, and you don’t want to burn them. They can turn from golden to brown quickly.
If you want to add more seasoning to them, adding some oregano, rosemary or thyme to the olive oil mixture before making is a great option. You could also sprinkle them with a little parmesan cheese instead of the sprinkle of salt for some variety.

Leftovers? No Problem!
In the rare occurrence that you have leftover Crostini, simply store them in an airtight container for up to 3 days and munch on them at leisure. Don’t freeze them because they will turn chewy and tough. Sometimes I even crumble them up and use them as croutons on a salad!

How To Make Crostini Crackers
Ingredients
- ½ baguette
- ¼ cup olive oil
- 2 cloves garlic; minced
- 1 tsp coarse or flaky salt
Instructions
- Preheat your oven to 350°F.
- Thinly slice a baguette into 1/4" rounds and place them flat and not overlapping on a baking sheet.
- In a small bowl, add the olive oil and minced garlic. Use a basting brush to brush the olive oil and garlic mixture over the top of each baguette slice. I find you may need to scoop out the little bits of garlic to add to the top. Sprinkle the baguette slices with the coarse salt.
- Bake for 12-15 minutes or until the baguette slices are crisp and golden brown. Watch carefully so as not to burn them. Remove and let cool for 5 minutes before serving.
