Turning stale croissants into Garlic and Herb Croissant Croutons is such a game-changer. Their buttery, flaky texture makes them far more delicate and flavorful than traditional croutons.
Tossed with garlic, fresh thyme and other spices, and a touch of olive oil, these croutons bake up light and crispy, with just the right balance of crunch and rich flavor. They’re an easy way to take your everyday meals to the next level with minimal effort.
Not only are these croutons incredibly tasty, but they’re also a great way to reduce food waste. Instead of tossing stale croissants, you can repurpose them into something elegant and delicious.

Ingredients You’ll Need
- Large Baked Croissants – If you have leftover stale ones great but I pick mine up on the bakery clearance racks. The ones that have just a day left on them before date and then I leave them out overnight to dry out. This way I save a little money and I put food to use so it doesn’t go to waste. You could also bake your own and let them sit out.
- Olive Oil – is used to add flavor but also to give them a crispy texture and help the herbs and spices stick.
- Garlic – Minced and lots of it! You could also use a tablespoon of garlic powder in a pinch.
- Onion Powder – Adds a little added zing. Dried diced onion will work too if you want more texture.
- Thyme and Celery Seed – both add an earthy note and incredible scent. The Celery seed also add a little crunch which is why I recommend the onion powder instead of dried.
- Salt
Do not use canister croissants; the store-bought croissants that you find in the refrigerator section of the grocery store don’t bake up the same and are too soft and more like a roll. You can use them but they won’t produce the same flaky texture as a traditional croissant.
How To Make Croissant Croutons
- Preheat your oven to 350°F
- Cut up the stale croissants into 1″ cubes using a serrated knife and add them to a large bowl.
- Add the garlic, salt, celery seed, onion powder and type to the bowl. Then drizzle with the olive oil.


- Toss the bowl of croutons and seasonings with a spoon or use your hands to ensure that the croissant cubes are evenly coated.
- Place the seasoned croutons on a baking sheet and bake for 10 minutes.
- Use a spatula to turn the croutons over and bake for another 10 minutes or until golden and crispy.
- Remove from the oven and let cool.

These crunchy croissant croutons are fabulous on top of salads, in soups or you can even use them in a stuffing recipe.
I love them so much I am not gonna lie I have been known to eat a handful as a snack too!
Storage
Store these herb and garlic croutons in a tightly sealed container or resealable bag for up to a week. They are best eaten right away because they are crispier.
If they are a few days in and have lost their crispiness you can place them on a baking sheet and back in the oven at 350°F for another few minutes to help them regain their crunch.
They do not freeze well and will get soggy.


Garlic And Herb Croissant Croutons
Ingredients
- 4 large stale croissants
- 3 cloves garlic; finely minced
- 2 tsp dried thyme
- 1 tsp onion powder
- 1 tsp celery seed
- 2 tsp salt
- 4 tbsp olive oil
Instructions
- Preheat your oven to 350°F.
- Cut the stale croissants up into 1" cubes with a serrated knife and add them to a large bowl.
- Add the minced garlic, onion powder, dried thyme, celery seed and salt on top of the cubed croissants. Drizzled with the olive oil.
- Toss to ensure the cubed croutons are evenly coated with the olive oil and seasoning.
- Pour the seasoned cubed croissants out onto a baking sheet and spread out evenly. Bake for 10 minutes and then use a spatula to turn them over and back for another 5-10 minutes or until they are golden brown and crunchy.
- Remove from the oven, let cool and serve or store for later.
