I love a big salad for lunch but if you are going to eat salad for lunch nearly every day like I do it is important to have a roster of delicious salad dressings to keep things unboring.

When I was working as a sales rep my favourite place to stop for lunch was Chipotle. Why because of their Chipotle Salad Dressing Recipe. I would stop in and pick up a steak or chicken burrito bowl salad every single time I had the opportunity because for some reason there is no Chipotle in Hamilton, Ontario where I live.

Chipotle if you are reading this… us Hamiltonians are waiting for you!

I no longer work in Corporate Canada so I am left with no other choice now than to drive into the Greater Toronto to get my favourite salad which isn’t going to happen. So… the next best thing is to try and use their ingredient list to make up my own copycat version.

What are chipotle chilis?

Jalapenos actually! But instead of being eaten when they are an unripe green, they are riped until they are a deep red then dried and smoked. A technique used by the Aztecs to preserve jalapenos for use in many dishes. The heat level of a chipotle pepper is the same as a jalapeno pepper.

What is adobo sauce?

Adobo sauce is a paste or marinade made from chili peppers, vinegar, herbs, and spices, used in Mexican cooking. It has roots in Spanish cuisine with a literal translation of adobo being marinade.

The flavour of adobo sauce is a tomato-based sweet and sour flavour that packs a mild amount of heat and smokiness. It is often paired with chipotle peppers for balance.

How do you make Honey chipotle Vinaigrette?

Add all of the ingredients to a blender. I recommend 2-3 chipotle peppers and 1 tbsp of the adobo sauce. Adjust the heat based on personal preference.

Blend on High for 30 seconds or until all peppers are blended into fine pieces. Pour into a resealable glass container and store in the fridge for up to 2 weeks.

Store in the fridge in a tightly sealed container for up to 2 weeks. Shake before using each time.

One thing you should know is that I found that after this dressing honey chipotle vinaigrette sits overnight the heat really takes hold and it gets feistier than how it tasted when just made. I suggest the first time you make this to stick with only 2 peppers and crank it up next time you make it if you like it muy caliente!

Ingredients
  

  • 1 ½ cups olive oil
  • ½ cup red wine vinegar
  • 3 tbsp liquid honey
  • 1 tbsp lime juice
  • 2-3 large chipotle chili peppers in adobo sauce
  • 3 tsp adobo sauce
  • 4 cloves garlic
  • 1 tsp oregano
  • ½ tsp cumin
  • 1 tsp salt
  • ½ tsp black pepper

Instructions
 

  • Add all of the ingredients to a blender and blend on high until smooth. Pour into a resealable container and use over salads for up to 2 weeks.

Notes

Adjusting The Heat:
If you find this recipe too spicy simply reduce the number of chipotle peppers you use in this recipe.  Or if you like it hot… load em up!
Storage:
Store the dressing in a sealed container in the fridge for up to 2 weeks.  Shake before using.
