Ingredients You’ll Need
- Pie Pastry – homemade or storebought will do just make sure it is at room temperature if using a frozen pastry. You can also make these with puff pastry if you prefer.
- Cherry Pie Filling – Homemade or storebough will work but look for a good brand with lots of cherries. Nothing worse than a cherry pie with no cherries in it!
- Egg and Milk – Whisked together this makes an egg wash used to give the pastry of this cherry hand pie recipe a golden glow when baked.
- Googly Eyes – Totally optional if you are making this recipe outside of Halloween or a kid’s party but they do make these cherry handpies fun and a little creepy with the cherry filling peaking out behind the pastry “bandage” wraps. Googly eyes can be found at many baking supply or bulk food stores.
Making Scary Cherry Hand Pies
- Preheat your oven to 400°F. Line a baking sheet with parchment paper.
- Roll the pie pastry out to about 1/8″ thickness and roughly 15″ X 20″ and trim to a rectangle. Save the cut-off pieces and put them aside. You will need about 8 rectangles in total so the remaining dough can be set aside.
- Place the 8 rectangles of pastry on the line baking sheet and fill with 2 tbsp of cherry pie filling keeping the filling away from the edges as best as you can.
- Roll the scraps of dough out and cut into long strips. Crisscross the pasty over the cherry pie filling to look like mummy bandages or a trellis. Layer another layer of pastry along the edges of the pies and gently press down to seal the cherry pie filling in. I find that trimming the excess pastry off around the edges again to form a clean rectangle seals the filling in the best.
- In a small bowl whisk the egg and milk together. Use a basting brush to baste the egg wash over the pastry. This will help the pastry turn a lovely golden brown while baking.
- Bake the pies for 20-25 minutes or until the pastry has turned golden brown and flaky looking and the cherry pie filling is bubbling.
- Remove the cherry hand pies from the oven. Let the cherry pie filling cool slightly and before it has fully cooled add a pair of googly eyes as you wish.
- Serve when cooled so that they are easier to handle.
Can These Be Made With Any Kind of Fruit?
Absolutely! This easy hand pie recipe can be made with any fruit filling you like and they can be made all year scary googly eyes or not. For a berry filling the cooking time will be the same but for stone fruits or apples you may want to add 5-7 more minutes to ensure the fruit is cooked.
The Pastry Is Browning Too Quickly?
If the pastry is browning too quickly but the pastry does not appear flaky and the bottom if you lift one up a little still looks raw place a sheet of foil overtop. This will allow the cherry handpies to continue to bake but the foil will keep the direct heat off of them so they won’t burn.
Storage and Freezing
Once the cherry hand pie recipe is done baking let them cool completely on the baking sheet or carefully transfer to a cooling rack. Once completely cooled, store on the counter then in an airtight container or dish covered tightly with aluminum foil or plastic wrap if you plan to eat in a day or 2.
If you want to make them ahead of time I recommend freezing them before they are baked. This way the flaky crust won’t be compromised and become soggy because of the added moisture from freezing.
Bake this hand pie recipe from frozen and add 2-3 more minutes to the bake time to compensate for the extra time to thaw in the oven.
What To Do If The Hand Pies Lose Their Flakiness?
Pop them back in the oven at 425°F for about 5 minutes to get rid of the moisture. You could even air fry them for a few minutes if you have one.
