Preheat your oven to 350°F and line a baking sheet with parchment paper.
Add all of the ingredients to a bowl. Mix well to combine.
Scoop out 1.5 tbsp of batter and roll into a ball. Flatten into a disk about 3/8" thick and place on the baking sheet. Continue with the remaining batter.
Bake for 13-15 minutes or until the cookies are firm to touch and can be lifted off the baking sheet without falling apart. Do not overbake. Let cool completely before serving.

Storage: Store in tightly sealed container on the counter for up to 2 days or in the fridge for up to 4 days. Freeze for up to 3 months. Optional Add-ins (3/4 cup max): diced or grated apple, raisins, chocolate chip, shredded coconut, other spices, chopped nuts.
