Place a large pan on medium heat, add in olive oil and onion. Sautee for 2 minutes.
Add in garlic and mushrooms and cook for 5 minutes or until mushrooms are soft.
Add in peas, oregano and water. Bring to a simmer and cook until peas are soft and water has evaporated. About 5 - 8 minutes. Season with salt and pepper to taste and serve hot or cold.
Notes
Storage: Keep in an airtight container in the fridge for 5 days. Or once cooled completely transfer to a glass container with a lid or a freeze safe resealable bag and freeze for up to 6 months. Reheat: Defrost frozen peas and mushrooms in the fridge over night and reheat in a sautée pan over medium heat.Tip: You can make the peas as mushy as you want simply by adding more water and continuing to simmer until they are the texture you want.
