8ozmushrooms, button or creminisliced in half if larger

Instructions
Preheat the air fryer to 400°F
In a small bowl add the 1 tbsp olive oil, 2 tbsp fresh lime juice, 2 tsp honey, 1/4 tsp chili powder, salt and pepper. Mix well.
Chop vegetables into approximately 1 - 1 1/2" chunks and place in a large bowl. Add cilantro to the bowl along with the cilantro.
Pour the lime dressing over the veggies and toss to coat. Evenly place the coated veggies in the air-fryer tray or basket.
Air-fry for about 15-20 minutes turning or tossing only once halfway through
Remove from heat and transfer to a large bowl.

You can use any vegetable you wish - just know that this recipe is based on softer veggies like zucchini, mushrooms and onions. Harder vegetables like cauliflower, Brussel sprouts, broccoli and corn will take longer to cook.Store leftovers in a tightly sealed container in the fridge for up to 3 days. Do not freeze.
