¼cupcanned chipotle peppers in adobo sauce; seeds removed
¼cupjarred roasted red peppers
¼cupcanola or avocado oil
4clovesgarlic
½ cupcilantro; about a 1/4 bunch
1tbspsmoked paprika
1 ½tspsalt
½lemon; juiced
2green onions; chopped
Instructions
Add the chipotle peppers, adobo sauce, roasted red peppers, garlic, paprika, cilantro, salt, and oil in a blender and blend until smooth.
Place the turkey wings in a large dish and add the chipotle mixture. Mix well to coat the turkey wings. Cover and refrigerate for 4 hours or overnight.
Preheat oven to 400°F on the convection setting. Place the turkey wings on a parchment-lined or non-stick baking tray and bake in the oven until crispy for 30-35 minutes or until the internal temperature reaches 160°F. If your oven does not have a convection setting flip the wings every 15 minutes and add about 10 more minutes to the cooking time.
Remove from the oven, squeeze the lemon juice over top and sprinkle with the sliced green onions before serving.
Notes
Storage:Leftover turkey wings can be stored in an airtight container for up to 3 days. You can reheat them in the oven or microwave, just take care to not reheat them too much so as to dry them out.Freezing: This recipe makes a great freezer meal. Just add the turkey wings and the marinade to a large freezer-safe container or bag, massage to coat the wings evenly, and then freeze for up to 3 months. Thaw in the fridge overnight.
