In a non-stick or cast iron pan heat the canola oil over medium-high heat and add the garlic and onions. Let cook until the onions become translucent. Do not let the garlic brown or it will come bitter.
Add the potatoes, salt, pepper and spices. Mix well until combined.
Continue to cook for about 10 minutes or until they are fork tender stirring only occasionally to allow the potatoes to brown and get crispy in places.
Remove from heat and serve hot.

Storage and ReheatingPan fried potatoes and onions can be stored in an airtight container in the fridge for up to 4 days.You can reheat this side in the pan or the microwave. Personally, I prefer reheating them in the pan as it brings back the crispy texture on some of the potatoes, while the microwave tends to soften them.I do not recommend freezing this dish, as the potatoes will become soft and mushy.
