Add the water and sugar to a small pot with the ginger.
Bring the water and sugar to a soft boil and let simmer for about 5 minutes or until the sugar has melted and disappeared into the water. The water will appear clear. This should only take a minute or two.
Remove the ginger simple syrup form the heat source and let cool completely.
Remove the ginger and store the cooled syrup in a glass jar in the fridge for up to one month.
Notes
Store in a glass jar tightly sealed in the fridge for up to a month. Do not freeze.
