Made with cake mix, these Chocolate Whoopie Pie Monsters turn a basic chocolate whoopie pie recipe into a fun Halloween treat that the whole family will love. Stuffed with a creamy marshmallow filling, these monster treats are hard to resist!
Preheat the oven to 350°F. Add all of the cake ingredients to a large bowl and beat with a hand mixer on low until combined and then on high for an additional minute to add a bit of air to the mixture.
Pour the batter into a piping bag with a wide round and smooth tip or large resealable bag and cut a corner off. Pipe batter into small circles onto cookie sheets about 1-inch apart to allow for spreading. Continue to do this in batches until the batter is used.
Bake 10 to 12 minutes until set being careful to not over bake. Let the cakes cool 2 minutes; remove from cookie sheets and place on cooling rack. Cool them mpletely before filling.
For the Filling
n a large bowl beat the butter with a hand mixer until creamy. Then gradually add the powdered sugar to blend. Once smooth and creamy add in the vanilla and salt and continue to beat until blended.
In a separate medium bowl add the marshmallow fluff and green food colouring. Mix until blended.
Fold the green marshmallow fluff into the butter mixture and blend until combined.
Scoop the marshmallow filling into a large piping bag and cut the end off as you did before for the cake mix whoopie pies. Pipe the filling over half of the whoopie pie tops/bottoms. Make sure to leave a little space along the edge so the icing doesn't spill out when you place the top on.
Once half of the whoopie pies have been frosted top each frosted cookie with a top. Place them in a cool place or the fridge making sure they are not stacked for about 5 minutes to firm up a bit.
Once firm enough to handle roll the edge of the whoopie pies gently in green sprinkles and then add googly eyes as you wish.
Notes
StorageStore in a cool place or fridge for up to a week in a tightly sealed container. This will make them much easier to eat and keep the filling from oozing out.Tips
Make sure to let the cookies completely cool before frosting or they will be very messy to deal with.
Leave about a 1/4 inch area around the edge of each cookie free from frosting. This way when the tops are added the frosting has a little room to spread.
Place the tops slightly off-centre and tilted so that it looks like the monster is peaking out from under his cookie hat.
Before adding sprinkles be sure to chill the assembled whoopie pies. The frosting is very soft so if they are not firm enough the frosting may spill out when trying to roll in the sprinkles.
Be sure not to stack these cookies. The cookie dough is very soft and airy so if stacked they may stick together and tear when you try and pull them apart.
