– bell peppers cut chunks – zucchini cut into 1" round slices – red onion cut into 1" wedges and separated – mushrooms, button or cremini sliced in half if larger – fresh cilantro finely chopped

Preheat the air fryer to 400°F

In a small bowl add the 1 tbsp olive oil, 2 tbsp fresh lime juice, 2 tsp honey, 1/4 tsp chili powder, salt and pepper. Mix well.

Chop vegetables into approximately 1 – 1 1/2" chunks and place in a large bowl. Add cilantro to the bowl along with the cilantro.

Pour the lime dressing over the veggies and toss to coat. Evenly place the coated veggies in the air-fryer tray or basket.

Air-fry for about 15-20 minutes turning or tossing only once halfway through.
