Vegetables – bell peppers cut chunks – zucchini cut into 1" round slices – red onion cut into 1" wedges and separated – mushrooms, button or cremini sliced in half if larger – fresh cilantro finely chopped

1. Preheat the air fryer to 400°F

Instructions:

2. In a small bowl add the 1 tbsp olive oil, 2 tbsp fresh lime juice, 2 tsp honey, 1/4 tsp chili powder, salt and pepper. Mix well.

3. Chop vegetables into approximately 1 – 1 1/2" chunks and place in a large bowl. Add cilantro to the bowl along with the cilantro.

4. Pour the lime dressing over the veggies and toss to coat. Evenly place the coated veggies in the air-fryer tray or basket.

5. Air-fry for about 15-20 minutes turning or tossing only once halfway through.
