“Made with cake mix, these Chocolate Whoopie Pie Monsters turn a basic chocolate whoopie pie recipe into a fun Halloween treat that the whole family will love. Stuffed with a creamy marshmallow filling, these monster treats are hard to resist!”
1. Preheat the oven to 350°F. Add all of the cake ingredients to a large bowl and beat with a hand mixer on low until combined and then on high for an additional minute to add a bit of air to the mixture.
2. Pour the batter into a piping bag with a wide round and smooth tip or large resealable bag and cut a corner off. Pipe batter into small circles onto cookie sheets about 1-inch apart to allow for spreading. Continue to do this in batches until the batter is used.
3. Bake 10 to 12 minutes until set being careful to not over bake. Let the cakes cool 2 minutes; remove from cookie sheets and place on cooling rack. Cool them completely before filling.
1. In a large bowl beat the butter with a hand mixer until creamy. Then gradually add the powdered sugar to blend. Once smooth and creamy add in the vanilla and salt and continue to beat until blended.
4. Scoop the marshmallow filling into a large piping bag and cut the end off as you did before for the cake mix whoopie pies. Pipe the filling over half of the whoopie pie tops/bottoms. Make sure to leave a little space along the edge so the icing doesn't spill out when you place the top on.
5. Once half of the whoopie pies have been frosted top each frosted cookie with a top. Place them in a cool place or the fridge making sure they are not stacked for about 5 minutes to firm up a bit.
