Add almond milk, cream, cocoa powder, stevia and salt to a small pot over medium-high heat. Mix well.
Heat mixing often but do not bring to a boil.
In a small cup add 2 tbsp of cold water and the xanthan gum. Mix well. Then add to the hot chocolate mixture and stir well. Continue to heat for another minute stirring often.
Serve in two heat tolerant mugs. Top as you wish!
Substitutions:Milk - any milk can be used if you are not following a keto or low carb lifestyle.Stevia - swap out for your preferred sweetener and if you do not follow a keto or low-carb lifestyle you can also substitute for regular sugar.
