1/2 cupbutter flavour refined coconut oil or vegan butter(Nutiva Coconut Oil is what I used)
1 tsp vanilla
1tbsp ground flaxseed
3 tbsp water
1/4 cup sprinkles
Preheat oven to 350F.
Add 1 tbsp flaxseed to 3 tbsp of water, stir and let sit for 5 minutes to make a flax egg.
In a large bowl add the flour, coconut oil, sugar, vanilla, baking powder, and flax egg. Mix just until well combined. Add sprikles and mix until blended evenly throughout. Do not over mix.
Form about a tbsp of batter into a balls and place on a cookie sheet. Flatten the balls of cookie batter with a fork. Bake for about 10 minutes or until cookies feel firm to the touch and bottoms are just starting to brown. Remove from oven and transfer to a cooling rack.
Let cool for about 5 minutes and serve. Best served cool.
Store in a sealed container for up to 5 days.Any variety of sprinkles will work. You could even try chocolate sprinkles!
